Mezcal Aguachile
- 2 oz mezcal
- ¾ oz simple syrup
- 6 pineapple cubes
- 2 cucumber wheels
- 1 slice serrano pepper
- 6 coriander leaves
- Tajín Clásico
First, rim your rocks glass with Tajín Clásico. Add ice to chill the glass while you mix.
In a shaker, add your mezcal, simple syrup, pineapple, cucumber, and coriander. Muddle the ingredients. Finally, add serrano pepper. Shake with ice. Double strain into your rocks glass.
