Mezcal Aguachile

  • 2 oz mezcal
  • ¾ oz simple syrup
  • 6 pineapple cubes
  • 2 cucumber wheels
  • 1 slice serrano pepper
  • 6 coriander leaves
  • Tajín Clásico
First, rim your rocks glass with Tajín Clásico. Add ice to chill the glass while you mix. In a shaker, add your mezcal, simple syrup, pineapple, cucumber, and coriander. Muddle the ingredients. Finally, add serrano pepper. Shake with ice. Double strain into your rocks glass.
