oz peach liqueur
oz Smuggler’s Cove Demerara Syrup
oz lime juice
pieces pineapple
mint leaves

Muddle five one-inch pineapple chunks in a mixing glass. Add the other ingredients, then flash blend with crushed ice for ten seconds. Double strain into a coupe, and garnish with a mint leaf.
