honey-ginger syrup

- oz honey
- oz water
- oz ginger juice
- tablespoons cane sugar
Stir the honey, sugar, and water in a small bowl. Add the ginger juice to the mix and stir until dissolved. You may need to briefly heat the mixture to dissolve the sugar.
To make ginger juice, juice fresh ginger or grate it finely then put in a cheesecloth and squeeze to separate the juice. One large piece of ginger results in about 1½ oz juice.
